Swirl cheese pies

Seriously, I have a weakness for anything wrapped in dough! So, I have my own version of these melt-in-your-mouth cheese pies with yoghurt made dough and a mixture of cheeses.


I made them in swirls to make sure that you can enjoy the saltiness of the cheese combination in every bite.

Honestly, I have a weakness for anything wrapped in dough, so I could eat these any time!

INGREDIENTS:

for the dough

  • 6 cups all purpose flour

  • 1 cup corn oil

  • 1 cup strained yoghurt

  • 1 cup milk

  • 2 tsp BP

  • 1 tsp salt

for the filling

  • 1 cup halloumi cheese

  • 1/2 cup cheddar cheese

  • 1/2 cup fetta cheese

  • 1 cup mozzarella cheese

  • 1/3 cup milk

  • 4 eggs

  • 1/2 cup mint finely chopped

  • a pinch of salt and pepper


METHOD:

for the dough

  • In a large bowl, mix the flour, salt and BP

  • Add the milk, oil and yogurt

  • Knead by hand for 10 mins or with the dough hook in a mixer for 5 mins until formed into a ball

  • Put the dough back in the mixing bowl, then cover the bowl with oiled cling film. Leave to rise for an hour in a warm place

Meanwhile... make the filling

  • In a bowl mix all the cheeses, dry mint, salt and pepper

  • Add the eggs beaten with the milk (leave some for brushing the pies)

  • Heat oven to 190C degrees

  • Line two baking trays with cooking paper

  • When dough is ready, cut the dough into six pieces and roll it out on a floured surface into rectangles

  • Spread the cheese mixture all over each rectangle (one at a time) and roll up the dough like a swiss roll

  • Slightly press the edges so it sticks down

  • With a sharp knife, cut pieces approximately 2 cm each

  • Lightly brush all over with the egg/milk mixture

  • Bake 25-30 mins until golden

  • Leave to cool in the tray for 5 min and then place it on a cooling rack to completely cool down

Tips:
1. For the filling you can use any cheese you like
2. It is better to use fresh mint but if you don't have, dry mint can also do the work
