Slow cooked pork with mushroom/wine sauce

This is a slow cooked pork recipe that it easy enough for midweek yet impressive enough for company.


A recipe that will rock your world! The only trick is to marinate the pork overnight to give it time to absorb all the spices and flavours and slow cook it in the oven for at least 7 hours!!!


My favourite recipes are easy, flavourful and satisfying. This slow-cooked pork ticks all the boxes. Its cooked while you go about your business.

INGREDIENTS:

  • 2.5 kg pork loin OR pork shoulder

SPICE RUB:

  • 2 tbs oregano

  • 3 tbs spoons olive oil

  • 2 tbs dried ginger

  • 2 tbs honey mustard

  • 1/2 tsp pepper

  • 2 tsp salt

MUSHROOM SAUCE:

  • 2 tbs olive oil

  • 1 medium onion finely chopped

  • 1 garlic glove minced

  • 500 gr baby mushrooms

  • 1/4 cup red wine

  • salt & pepper

  • 2 tsp cornflour/corn-starch mixed with splash of water to thicken your sauce

INSTRUCTIONS:

PORK:

  • Rub pork with the olive oil

  • Mix Rub together then sprinkle over pork. Pat to adhere all over

  • Leave to marinate OVERNIGHT or AT LEAST 2 HOURS

  • Pre heat oven to 150 C

  • Heat 1 tbsp oil in a large skillet over medium heat. Add pork and sear all around until deep golden brown (don't let spices burn)

  • Wrap pork with cooking paper and foil and place in a non-stick pan

  • Place the pan in the oven and FORGET IT for at least 7 hours

MUSHROOM SAUCE:

  • Using the same skillet as above add the olive oil and heat

  • Add the onion and garlic and cook until a bit golden

  • Add the mushrooms and cook for 3-4 minutes (it's important not to overcook it)

  • Season with salt and pepper

  • Pour all juices from the pan that the pork is cooked into the skillet

  • Add the wine and simmer for 2-3 minutes

  • Add cornflour water mixture, mix

  • simmer for about 3-4 minutes until gets thick

TO SERVE:
1. Arrange pork onto serving platter, cover loosely with foil (10 - 20 minutes rest)
2. Slice pork into thick slices (1.5 - 2 cm)
3. Serve with PLENTY of the mushroom sauce
4. Enjoy!
