For a creamy rice pudding, a short- or medium-grain rice is recommended, such as arborio, which is known for its ability to become creamy when cooked.
INGREDIENTS:
3 cups Milk
1 cup 35 % whipping cream
1/2 cup Arborio or Italian-style rice
1/4 cup sugar
1/2 tsp ground cinnamon
1/4 tsp salt
1 tbsp vanilla extract
INSTRUCTIONS:
In heavy saucepan, bring milk, cream, rice, sugar, cinnamon and salt to boil over medium heat, stirring often
Reduce heat to low; cover and simmer, stirring occasionally, for 20 min
Stir in vanilla extract
Serve warm or cold
Dust some cinnamon, ground nutmeg, ground ginger, or cardamom onto each serving
TIPS:
1. This pudding thickens upon cooling. Add more cream or milk when serving to thin, if desired.
2. You can make this rice pudding dairy-free by replacing the milk with a non-dairy option, such as almond, soy, or coconut milk. Not only will the pudding be allergy-friendly but it also gives the rice an additional flavour.
3. The rice pudding will last about 4 days in the refrigerator when covered well.
