Seafood Linguine

This is not your ordinary weekday pasta. It’s a special occasion pasta. Seafood linguine is the perfect way to impress your friends and family and its actually really easily!


This one a is a mix of shrimp and clams tossed together with linguine in a white wine sauce. An easy yet elegant meal that’s perfect for entertaining!

The recipe could be easily adapted for calamari, mussels, lobster, or crab. Just know if you're using clams and mussels those will take a bit longer and will require a lid to steam and open them up.

INGREDIENTS:

  • 4 tablespoons olive oil

  • 1/2 cup spring onions

  • 1/2 shallots finely chopped

  • 2 teaspoons garlic minced

  • 1/4 teaspoon crushed red pepper flakes optional

  • 1/2 glass white dry wine

  • salt and pepper to taste

  • 2 tablespoons butter

  • 1 kg linguine or other long pasta

  • 1 kg shrimps

  • 1/2 kg clams

  • 2 tablespoons parsley chopped

INSTRUCTIONS:

  • Heat the olive oil in a large pan over medium heat. Add the onions and cook for 4-5 minutes or until softened. Add the garlic and cook for 1 more minute

  • Stir in the red pepper flakes (optional). Season with salt and pepper to taste

  • Bring to a simmer and cook for 5 before you stir in the butter

  • Season the clams with salt and pepper, then add them to the pan

  • Cook the clams for around 10 minutes together with the onions (cover with a lit)

  • Season the shrimp with salt and pepper and add them to the pan with the clams and onions, cook for 3-4 minutes or until pink and opaque

  • Add the wine and leave to simmer for 5 more minutes

  • While the sauce is simmering, cook the linguine in a large pot of salted water according to package directions

  • Drain the pasta, reserving 3/4 cup of the pasta cooking liquid.

  • Mix the drained pasta in the seafood sauce adding some pasta liquid if needed

  • Serve it immediately and sprinkle with parsley

Tips: 
1. Any mix of seafood will work here, other great options include chunks of fish, lobster, clams, calamari, mussels or scallops.
2. If you don't have linguine you can try a different long pasta such as fettuccine or spaghetti.
