Prawn teriyaki noodle bowl

Prawns cooked in teriyaki sauce is a very easy dish to prepare, perfect for everyone who works full-time and doesn't have time or energy to engage in lengthy and complicated recipes at the end of the workday.


Ramen noodles are tossed together with prawns, fresh, crunchy vegetables and a homemade teriyaki sauce that is to die for.


What is so great about creating this sauce at home, is that it’s an easy combination of pantry ingredients that deliver a punch of flavour! Another thing is that you get to control what goes into the sauce.

I recommend using low-sodium soy sauce as salt can always be added, but not taken away.

INGREDIENTS:

  • 500g raw prawns , peeled leaving tails intact, deveined

  • 1/2 cup (125ml) salt-reduced soy sauce,

  • 1/4 cup (55g) brown sugar

  • 1 1/2 tbsp rice wine vinegar

  • 1 tbsp finely grated ginger

  • 1 1/2 tsp cornflour

  • 400 gr soba noodles

  • 2 tbsp sesame oil,

  • 1 red chilli finely chopped

  • 1 teaspoon crushed red pepper flakes

  • 1 red and 1 green pepper cut in squares

  • 1 cup chopped Chinese mushrooms

  • 1 cup green beans

  • 3 spring onions, cut into 2cm pieces

  • 2 tsp sesame seeds, toasted to serve

Make the soy sauce mixture up to 2 hours ahead, cover and refrigerate.

INSTRUCTIONS:

  1. In a large sauté pan, heat the sesame oil over medium heat.

  2. Add in the garlic and ginger, snap peppers and sauté for 2-3 more minutes.

  3. Add the green peas and mushrooms and continue to sauté for 2 more minutes.

  4. Add in the shrimp and sauté for another 3-5 minutes, or until the shrimp are just starting to turn pink.

  5. In a small bowl, whisk together the soy sauce, teriyaki sauce, green onion, red fresh chilli and red pepper flakes. Pour the sauce into the sauté pan and toss to coat completely. Bring the sauce to a simmer and let simmer for a couple minutes to thicken slightly

  6. Add in the cooked rice noodles and toss to coat.

  7. Sprinkle with toasted sesame seeds and spring onions (OPTIONAL)

NOTES:                                                                   1. This dish is very versatile – chicken, shrimp or sliced steak would all work great! You will need to add additional cooking time if using chicken or steak
2. You can also add other veggies if desired-broccoli and bamboo sprouts would be delicious!
3. Rice noodles or ramen noodles can be also used.
