Olive pies/swirls

If you always wanted to learn how to make olive pies, but just couldn't get them right, this is the perfect recipe for you! It is so easy and you can easily become a master at it.


Apart from being super easy they are honesty the most delicious olive pies/swirls I have ever try and trust me... I have tried lots of them!

Simply chop up the ingredients and mix them all together! A fantastic snack to enjoy for breakfast, brunch or afternoon tea or coffee.

INGREDIENTS:

for the dough

  • 1kg all purpose flour

  • 1 1/4 cups corn oil

  • 1 1/4 cups strained yoghurt

  • 1 cup milk

  • 1/2 cup orange juice

  • 2 tsp dry yeast

  • 1/2 tsp sugar

  • 1 tsp pinch salt


for the filling

  • 2 1/2 cups pitted olives

  • 1 bunch of spring onions

  • 1 bunch coriander

  • 1/2 cup olive oil

  • 2 tomatoes finely chopped

  • sesame seeds


METHOD:

  • In a large bowl, mix the flour, salt, yeast and sugar

  • Add the milk, oil, yogurt and orange juice

  • Knead by hand for 10 mins or with the dough hook in a mixer for 5 mins until formed into a ball

  • Put the dough back in the cleaned out mixing bowl, then cover the bowl with oiled cling film. Leave to rise for an hr in a warm place

  • Meanwhile, make the filling

  • In a mini food processor put the pitted olives

  • Add the olive oil, spring onions and colander and whizz to a rough paste

  • Transfer the paste into a bowl and add the finely chopped tomatoes and mix with a spatula

  • Heat oven to 190C degrees

  • Line two baking trays with cooking paper

  • When dough is ready, cut the dough into six pieces and roll it out on a floured surface into rectangles

  • Spread the olive paste all over each rectangle (one at a time) and roll up the dough like a swiss roll

  • Slightly press the edges so it sticks down

  • With a sharp knife, cut pieces approximately 2 cm each

  • Lightly brush all over with some olive oil and sprinkle some sesame seed

  • Bake 25-30 mins until golden

  • Leave to cool in the tray for 5 min and then place it on a cooling rack to completely cool down

  • To store them, place it in a cool place in an air tight container

Tips:
1. To seal the rolls put some water in your palms and press gently the edges
2. To add an extra twist you can add in your paste some fresh mint 
3. You can substitute orange juice with 7up/Sprite or Fanta for this recipe (same amount) - If you are replacing it then omit the added sugar in the ingredients
4. You can refrigerate the pies/swirls up to two months
