Oats, peanut butter, chocolate chip cookies

If you like peanut butter, these are the cookies for you!


They are exploding with flavour, soft, chewy, unapologetically thick, and irresistible.


These delicious cookies have just the right combination of crisp on the outside, chewy on the inside, and of course, big notes of chocolate, butter, and just the right hint of salt.

If you like peanut butter, you will love these cookies!

INGREDIENTS:

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon sea salt

  • 1/2 teaspoon ground cinnamon

  • 1 cup unsalted butter, at cool room temperature

  • 1 cup granulated sugar

  • 1 cup packed light brown sugar

  • 1 cup creamy peanut butter

  • 2 large eggs

  • 1 tablespoon pure vanilla extract

  • 2 cups old fashioned oats

  • 1 cup semisweet chocolate chips

  • Extra sea salt, for sprinkling on cookies


INSTRUCTIONS:

  • Preheat oven to 190 c degrees

  • In the bowl of a stand mixer, or in a large bowl with an electric mixer, combine butter, sugars, and peanut butter until smooth. Beat in the eggs and vanilla and cinnamon until combined

  • Add flour, baking soda, salt, and oats and mix until just combined (don’t overmix). Stir in chocolate chips

  • Lightly grease 2 baking sheets or line with cooking paper. Use a cookie scoop or spoon to scoop the cookie dough onto the prepared baking sheet, about 3 tablespoons of dough per cookie. Leave about 2-inches between each cookie because they will spread as they bake

  • Sprinkle with some flaky sea salt

  • Bake for 8-10 minutes until just slightly glossy in the center

  • Remove from the oven and let cool for 10 minutes before removing to a cooling rack.

Notes
1. Store the cookies in an airtight container for up to 3 days on the counter. You can also freeze the baked cookies or cookie dough for up to 3 months. 
2. Some flaky sea salt on top it's a must
3. I baked my cookies for 10 minutes and took them out when the centers were still slightly glossy — I do not like overbaked cookies! They will continue to cook and set up somewhat after they are removed from the oven, so don’t be afraid to take them out just before they’re set completely.
