Linguine with chorizo and spicy tomato sauce

This linguine with chorizo and spicy tomato sauce is one of my son's favourite comfort food as It has all the elements he loves in food – chorizo (or anything meaty), tomatoes and of course pasta!


In this recipe you can easily substitute out the chorizo for something else like pancetta, or bacon or during fasting days you can even substitute chorizo with white mushrooms and prawns. Chorizo of course is the only ingredient that will give that depth of flavour!

This spicy chorizo tomato linguine is ready in under 30 minutes – a perfect midweek meal.

INGREDIENTS:

  • linguine pasta 500gr

  • cooking chorizo 4, chopped

  • 3 onions peeled and finely chopped

  • 1 garlic glove

  • chilli flakes

  • 1 kg tomatoes 4 very ripe, chopped

  • olive oil

  • salt and pepper to taste


DIRECTIONS

  • Fry sliced chorizo in a hot frying pan, turning regularly until nice and crispy

  • Remove with a slotted spoon and set aside

  • Leave the oil from the chorizo in the pan and add the onions. Fry slowly on a medium heat, stirring often, until golden and soft

  • Add the chopped garlic and chilli flakes and stir through for a couple of minutes

  • Pour in the blended tomatoes, stir

through and allow to simmer on low heat for 5-10 minutes

  • Meanwhile... cook al-dente your linguine, drain and set aside.

  • Season the tomato mixture with salt and pepper

  • Add the chorizo to the pan followed by the linguine.

  • Stir until well combined

  • Serve with some fresh chopped mint on top

Tips:
1. The key to the recipe is to be patient with frying the onions until they’re golden and soft. This adds a delicious sweetness to the dish that cuts through the acidity of the tomato sauce and the intensity of the chorizo.
2. If you like, during fasting days, you can substitute chorizo with white mushrooms and prawns. It will also taste great!
