Shrimp & Avocado Salad

This prawn & avocado salad is one of my family's favourite dishes and it takes literally 10 minutes to put together. Thanks to my dear friend Eleni, who shared this recipe with me and of course... the tangy dressing and fresh ingredients, it feels like so much love and attention has been put into it. Definitely a meal life-saver!

INGREDIENTS:

for the salad:

  • 450g shrimp, peeled and deveined

  • 2 tablespoons sesame oil

  • 2 cups lettuce

  • 2 cups iceberg

  • 1 avocado cut in cubes

  • 3 carrots shredded

  • 2 tablespoons sesame seeds (toasted)

for the dressing:

  • 3 tablespoon extra-virgin olive oil

  • 3 tablespoons sesame oil

  • 3 tablespoon soy sauce

  • 1 medium lemon


Method

  • Heat 2 tbsp sesame oil in a frying pan, add the prawns and and stir for about 4-6 minutes, until cooked. Set aside into a bowl

  • In a separate bowl make the dressing: mix together the olive oil, sesame oil, soy sauce and lemon juice

  • Line a large salad bowl with lettuce and iceberg leaves

  • Put the shredded carrots on top

  • Add the avocado cubes

  • Add cooked shrimp and sprinkle with the sesame seeds

  • Season with the dressing and give a quick stir to mix together.



TIPS FOR THE SHRIMP AVOCADO SALAD
1. This shrimp avocado salad recipe can be made in under 15 minutes
2. You can put this over slices of toasted bread to make it more substantial
3. If making this for a party, you can easily double or triple the recipe. Just cook shrimp in batches to not overcrowd the pan
4.To make ahead, combine all the ingredients except for the avocado and keep this refrigerated, then add them just before serving the shrimp avocado salad and season with the dressing
