Healthy Nut Bars with dark chocolate

Homemade nut bars are a delicious snack option if you are looking for something a little more nutritious than the store bought version, but still delicious and filling. These nut bars are made with simple and wholesome ingredients, such as nuts and seeds and are free from refined sugar and artificial additives. We have added a little drizzle of dark chocolate to ours too.


Whether you are looking for a quick and easy snack to grab on the go or a healthy treat to enjoy after a workout, these healthy nut bars are a great option. You can experiment with different flavours and ingredients to find the perfect combination for you. These are sweet and salty and deliciously sticky.



By making your own nut bars, you can control the ingredients and adjust the recipe to suit your taste preferences.

INGREDIENTS:

  • 300 g (1 cups) Mixed nuts - such as almonds, cashews, and peanuts

  • 140 g Mixed seeds and berries - such as pumpkin seeds, goji berries and sunflower seeds

  • 8 tablespoon maple syrup

  • 2 tablespoon peanut butter

  • 100g Chocolate - dark

  • 1 teaspoon sea salt flakes

Making your own snacks is often more cost-effective than buying pre-packaged options.



INSTRUCTIONS:

  • Preheat your oven to 180°C/160°C(fan)/350°F/Gas 4.

  • Spread 300 g Mixed nuts on a baking sheet and bake for 10-12 minutes, or until lightly toasted.

  • In a small saucepan, heat 8 tablespoon maple syrup and 2 tablespoon peanut butter over low heat until melted and well combined.

  • In a large bowl, mix the toasted nuts, 140 g Mixed seeds and 1Pinch Sea salt together.

  • Pour the maple syrup and peanut butter mixture over the nut and seed mixture and stir until well combined.

  • Line a 10x8 inch baking dish with parchment paper and press the mixture into the dish.

  • Refrigerate the mixture for at least 30 minutes, or until firm.

  • Melt 100g Chocolate and drizzle over the set mixture. Refrigerate for a further 10 minutes.

  • Cut the mixture into bars and store in an airtight container in the refrigerator.


RECIPE TIPS:
For some extra flavour, add a little vanilla extract, as it adds a nice warmth to these chocolate nut bars.
You can add some shredded coconut for a nice addition of flavour.
Once the nut butter and honey have melted and been stirred into the nuts, it’s important that you work quickly, so the mixture doesn’t have time to set and harden before you’ve even had the chance to spread it in the pan.
If you find that your spatula is sticking a bit too much, you can slightly wet it and it should make it easier to work with.
When cutting the bars, use a good, sharp knife and to push it right down into the bars. Don’t use a sawing motion. 
For some added warmth, add a pinch of cinnamon.
