Chickpea Salad

Chickpea Salad combines all of my favorite fresh vegetables in one delicious bite. Chickpeas are combined with juicy tomatoes, crunchy cucumbers, black olives and feta cheese all tossed in an easy homemade lemon kissed dressing.


It is a complete low fat, high protein meal that helps you to stay full for hours!


A super power salad that is so satisfying.

This easy salad recipe makes a perfect side dish for burgers or steaks.

INGREDIENTS:

  • 1 pack frozen chickpeas (cooked as per package instructions)

  • 1/2 cup feta

  • 2 cups tomatoes cut in cubes

  • 2 cups cucumber diced

  • 1/2 cup parsley

  • 1/2 cup black olives halved

DRESSING:

  • 1/4 cup olive oil

  • 2 tbs red wine vinegar

  • 1 tsp lemon

  • 1 tbs honey

  • 1 tbs mustard

  • salt & pepper

INSTRUCTIONS:

  • Combine the dressing ingredients in a small bowl and whisk to combine (or shake them together in a small mason jar)

  • Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste and toss to coat

  • Refrigerate at least one hour before serving

Tips:
1. If you want to keep it dairy free, you can substitute feta with hard boiled eggs, a can of tuna or a handful of chopped toasted nuts. 
2. If you have any extra dressing left over, store it in an airtight container in the fridge for up to 10 days.
