Chicken fajitas are one of the easiest and flavourful meals. All you need is chicken, bell pepper, onion, lime juice, beer and spices, plus tortillas and your favourite toppings.

While you can buy pre-made seasoning packets, nothing compares to the flavour of homemade fajita seasoning which is rather easy to make.
INGREDIENTS:
6 boneless skinless legs
3 large onions sliced
3 bell peppers (I use 1 red, 1 orange and 1 yellow) , thinly sliced
2 tablespoons olive oil
Fajita Seasoning
1/2 tablespoon chili powder
1/2 tablespoon ground cumin
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1 can of beer 330 ml
For Serving
tortillas
sour cream or yogurt
avocado, lettuce & tomatoes
DIRECTIONS:
Cut the chicken in strips
In a large bowl, whisk together all the spices and 1 can of beer 330ml
Season chicken with salt and pepper, then add to bowl and toss to coat
Let marinate in the fridge at least 30 minutes or preferably overnight
When ready to cook, heat some olive oil in a large pan over medium heat
Add chicken and cook until golden
In a separate pan add some olive oil and cook bell peppers and onions for 15-20 minutes or until they become soft (not too soft)
In a platter serve the chicken and the mixture of peppers and onions
Arrange in a separate platter the tortillas and toppings
And let your guests or family to create their own wrap!
