Cherry tomato, mozzarella & pesto salad

Tomato and mozzarella salad is a traditional summer side dish that never goes out of style. This version uses cherry tomatoes, bite sized mozzarella balls and pesto sauce and is perfect for a pot luck or barbecue.

With creamy mozzarella and tangy tomatoes, this summer salad recipe is a dinner idea and you'll want to make again and again!

INGREDIENTS

  • 4 cups cherry tomatoes halved

  • 1 cup fresh mozzarella balls

  • 5 tablespoon basil pesto

  • small handful of basil or mint leaves

  • 1tsp olive oil

  • 2 tablespoons balsamic vinegar

  • little salt (as the pesto sauce it already salty) and pepper to taste


INSTRUCTIONS

  • Place the tomatoes, mozzarella balls, and basil/ mint leaves in a large bowl

  • Pour on top the pesto sauce (as shown above)

  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt and pepper to taste

  • Pour the dressing over the tomato mixture and gently toss to coat evenly

  • Serve

Tips:
1. You can make it ahead of time for a party, refrigerate and add the dressing just before serving.
2. Basil pesto makes a perfect salad dressing as it is packed with olive oil.
