Auntie Alkistis petit fours

This family recipe comes from my Auntie Alkistis, the youngest sister of my dad, who was an amazing home baker with influences from Asia Minor (Mikra Asia).


This recipe is simple, super delicious with a crunchiness that is incomparable.


Of course, there are a lot of recipes for petit fours but for me this is the best!


Half filled with strawberry jam and half with apricot raspberry jam. Pretty to look at and so tasty.

INGREDIENTS:

  • 6 eggs

  • 1 cup of spray butter, at room temperature

  • 1 cup sugar

  • 3 tsp baking powder

  • 2 tbs corn flour

  • 1tsp vanilla extract

  • 2 tbs cognac

  • 2 1/2 - 3 cups of all-purpose flour

DIRECTIONS:

  • Preheat the oven to 190ο set to fan

  • In a bowl beat with a hand mixer the eggs with the butter and sugar

  • Add the vanilla and cognac and continue mixing for 1 more minute

  • Add the flour, the corn flour and the baking powder and continue mixing with your hands until you get a soft dough

  • Ideally, you should wear gloves

  • Transfer the dough on to working board and cut it in 4 pieces

  • Roll it on a floured surface (1/2 cm thick). and with a cookie cutter (any shape you like), cut the dough.

  • Bake for 12-15 minutes

  • Let them cool

TO ASSEMBLE:

  • 150 g strawberry jam

  • 150g apricot jam or

  • Any other filling you like (e.g., Nutella, peanut butter)

  • Spread the jam between the inside surface of the petit fours and cover with another

  • Serve
